| Why a "FOOD COURT" in an
"Artsy-Fartsy" Website????? Well, why not?? We all love to eat, right? A little background information.... we owned & operated a catering business in St. Pete for almost 20 years, so we really do love to eat and cook. IN THE MEANTIME......... my lastest
"thing" is "power-cooking" - - even though we're almost old
enough to retire, we can't afford to.. so we still work and we like a real
home-cooked supper every night. So, I read about these new "personal
chefs" who come in and prepare a few weeks entrees and side dishes for you
(but since I really love to cook and we really like what we cook, we thought we
could do it ourselves - besides...we couldn't afford a "personal chef!)so I
thought it was a neat idea, and I wrote up a plan for about 25-30 meals and we spent a
Saturday cooking and packaging and freezing entrees, starches, veggies
and soups. Well, we're on our third round of "power cooking" and

picture of the food below!! WOW! I've been losing weight and haven't really even been trying to do that!! About 6 months ago, after my yearly blood pressure checkup (you know, this stuff starts to pop up when you get in the upper 50's / lower 60's), I was told my cholesterol was too high - and I should start taking some medicine. Well, this wannabe-witch-doctor doesn't take medicine, so I told the Dr. to give me 6 months to fix it myself. So I read several books, tons of stuff on the 'net, and decided that I had better cut out dairy and animal fats (and, being originally from Wisconsin-the Dairy State - I guess I really ate a ton of butter, half-and-half, real whipping cream, cheeses of all sorts, and of course, the fat on steaks and pork chops!!!) So, since I always jump into things with both feet, I've been trying out low-fat, low cholesterol recipes - and have actually found some very tasty ones - including homemade ice cream - from chocolate soy milk and fat-free non-dairy coffee creamer (amaretto flavor), and egg beaters - it's not quite as creamy as the "real stuff", but it really was delicious. I'll be adding some of these recipes shortly! ps - I lost about 20 pounds from Feb. til May and I really still am a very BIG eater (we love fruits and veggies, and grow a lot of our own veggies) - in Earth Boxes - see link below
